Silvio’s Brazilian BBQ is celebrating their one-year anniversary on the Pier in Hermosa
on December 2nd.
Has it been a year already? Yes it has and Silvio’s is throwing an anniversary party to celebrate…Brazilian style! “It’s been a little over a year since we opened and we want to throw a great party for our regular customers, family, friends, and vendors” comments Doug Howarth, co-owner of Silvio’s. “Opening on the pier was both a dream come true and, when the economy tanked, an almost living nightmare”. Being the new kid on the block is always a tough hurdle in the small beach town of Hermosa Beach. With most of the competition being owned by local south-bay’ers with local followings, Silvio’s had to depend on their food and service to get them over that hurdle and into the hearts and minds of locals and visitors alike.
“It’s been a tough first year” comments Silvio Correa. The transition from a catering company into the restaurant business is not easy, especially in a high volume area like the pier in Hermosa. The term “long days” took on new meanings for the operating managers. Over the course of the year however, the business thrived. More and more guests stopped in to check us out and more and more guests became friends and regulars. Silvio’s Brazilian BBQ brings Chicago Bears fans and Penn State Nittany Lion fans from all over Los Angeles to Hermosa Beach.
A Bears headquarters at a Brazilian BBQ restaurant? Penn State? What about USC? Huh? Questions like these are heard all week long by Silvio’s manager and partner TJ Kowalczyk. When Silvio’s opened last July, TJ knew that business on the pier was very slow during the winter. Taking care of the locals and attracting customers using creative promotions was key to survival during the down time. What better than football to bring em’ down.
The big question was how to compete against the two major players on the pier, Sharkeez and Patrick Malloy’s, showing all the games. Silvio’s doesn’t have a full liquor license or the capacity to compete with the volume discounting that their competitors can use to lure customers in. The answer, get personal. Pick a single team and go with it. Being from Chicago, TJ decided to turn Silvio’s into the Los Angeles Headquarters of the Chicago Bears. Offering great breakfast and beverage specials along with Chicago fare like Italian Beef sandwiches, Bratwurst sandwiches, and HUGE spicy chicken wings, TJ was able to turn Silvio’s into Soldier field for a day in the South Bay. “We’re packed” says TJ. Usually about two hours before the game we start to see fans coming in and kick off is always a blast.
So what about Penn State? After seeing how successful the “Home of bears” took off last year, co-owner Doug Howarth, a huge Penn State fan, decided to do the same thing. So every Saturday, Happy Valley has a west coast headquarters. “It’s definitely picking up” comments Howarth. “It’s a much smaller pool of fans than the Bears so it’s not as busy…yet”. For game day on Saturday Silvio’s offers some delicious food and beverage specials including sticky buns from Ye Olde’ college Diner in State College (home of Penn State) and they’re also shipping in wing sauce from Champ’s sports bar, a popular Penn State establishment known for their incredible wings.

Silvio’s Brazilian BBQ chosen as food vendor and potential back-stage caterer at 3-day PHISH Halloween Festival.
Phish, a popular jam-band from Vermont, is performing their annual Halloween show as a part of 3-day music festival in Indio. The concert/festival, entitled “Festival 8” www.phish.com/festival8/ will be held at the Empire Polo Fields, the same location where the hugely popular Coachella music festival and Stagecoach Country Music Festival are held.
“Phish shows are a great time and the festivals are even better” says Silvio’s owner and certified “phish-head” Doug Howarth. I’ve been to over 30 Phish shows in my life so to be asked to sell our BBQ at one of their shows let alone some of the back stage catering is a dream come true.
After a 5-year hiatus, the band started to tour together again this year. Sometimes described as “the Grateful Dead of Gen-X” Phish has played to audiences world wide. Along with 11 studio albums, Phish fans are notorious “tapers” and music traders. The band allows a set amount of fans to bring audio recording equipment into the venue to create live recordings of each and every set they play. These shows are then traded worldwide.

Who says Brazilian BBQ isn’t the next big thing? According to the owners of Silvio’s it can be and you know what, it just may happen. On August 21st, the owners of Silvio’s Brazilian BBQ were informed that they made it to the FINAL round of “America’s Next Top Restaurant Franchise” competition held by the Franchise Edge.
The competition was open to anyone in the United States who thought their concept could be “America’s Next Top Franchise”. The Franchise Edge was inundated with over 250 applicants nationwide who thought they had what it took to win. “Franchising was a bit farther on the horizon for us” commented Silvio’s co-owner Doug Howarth. “This was an opportunity that presented itself however, and it meant a lot of the costs associated with developing the concept as a franchise would be absorbed. That kind of money, approximately $75k, was too tempting to keep our plans on the back-burner so we went for it”.
The franchise concept would fall in the “quick-service” segment of the industry, similar to local franchises such as Daphne’s Greek Café, Chicken Dijon, and Wahoo’s Fish Taco’s. It’s a step above fast food, and a step below full service where the customer typically orders their meal at a counter, receives some type of table marker, then sits and waits for their order to be delivered to them. For the past decade, the quick service segment has continued to be the fastest growing segment of the industry.
When asked why he believes Silvio’s can take the prize, co-owner Silvio Correa admits it’s a combination of a few factors. First is the value-driven pricing of our menu. “Our menu items are huge” continues Correa, “and they’re all made from scratch with some of the finest ingredients available in the market”. Second, the core values adhered to in running the business. Integrity, loyalty, and accountability are the main building blocks Silvio’s has grown their success on. Last is the differentiation we present to the public in the market place. There are more and more adventurous diners out there who are looking for something new, something delicious, and something exciting. “Silvio’s provides all of this to our customers” continues Howarth. “I know main stream America will love it!”
The menu will be comprised of the most popular items at their full service concept, Silvio’s Brazilian BBQ Bar & Grill. YES, BBQ grills get dirty and need cleaning - especially after you've made some yummy barbeque recipes. I've read a variety of tricks/suggestions ... but this works well for me so it's my attempt at a how to clean your grill.
First, for the inside on the cooking grids, you can use a grill stone. Another approach is my "deep-cleaning" cycle which entails putting a few sheets of tin foil over the bbq grill cooking grid, and cranking the heat for a half hour. This really cleans things (kinda like a self-cleaning oven) as it turns everything to ash - be sure to check your grill warrenty to make sure this is OK to do.. You'll still have some grease goop on the sides, but hey, that adds some seasoning flavor!
GAS GRILLS
Some BBQ Grills have ceramic tamers to disperse the heat (versus metal) and I've heard of various approaches to cleaning them ... but these seem like a lot of work and run the risk of breaking the tamers. All I would do is turn 'em over!!!! After they have cooked a few times, anything on the bottom has turned to ash; so when you rotate it, you got a pretty clean top - now that is an incredibly easy how to eh?!?
For the outside, wipe off any major food goop, then hit it with some "Bar Keeper's Friend" which is a cleaning powder. This can scratch the stainless, so be careful. I then finish with "Stainless Steel Magic" which was recommended by a friend ... and I tell 'ya ... it *IS* Magic! Be sure to cover it up when done ... and your grill will be so clean and look sparkling that your friends will come over to drool over it! ;-)
CHARCOAL GRILLS
For charcoal BBQ’s, it’s very simple to clean. First, scoop out all the ashes from the bowl. Second, using a semi-flexible metal utensil like a spatula) or I use a piece of curved scrap aluminum from an hvac project next door), and scrape out as much of the “caked” on grease-laden ash stuck to the side of the bowl. Lastly, using warm soapy water and a plain brillo-pad (not S.O.S), scrub down the bowl until you’ve removed all the particles. The last thing for the bowl is to wipe it down with a rag and a touch of olive or canola oil to prevent rusting over the winter. To clean the grates, the easiest way is to fire up some charcoal, get the grill hot on both sides, and using a grill brush, scrape off as much of the left-over food particles as possible. After that, use a small wire bristle brush to clean out the nooks and crannies. For the outside of the bowl, a rag with some degreaser and water does the trick perfectly.

Silvio’s Brazilian BBQ chosen to bring their “Q” to World Champion LA Lakers’ Jordan Farmars’ Celebrity Golf Classic and Gala.
Jordan and father Damon, regulars at Silvio’s Brazilian BBQ on the pier in Hermosa Beach, knew the food would be a hit with the slew of celebrity guests and athletes attending the event including fellow Laker Derek Fisher. The Gala and Golf Classic was held July 19th and 20th right here in Los Angeles, bringing athletes, celebrities, and others together for a wonderful weekend, all in the name of Charity. All of the money raised will go to the Jordan Farmar Foundation which supports various childrens’ charities in the Southern California area.
At the Gala, guests were able to mingle with Jordan and a number of other athletes and celebrities while taking in the view from 1010 Wilshire, voted downtown’s top roof. This exclusive gala was an “all-White Affair” and gave guests a taste of LA, from great food, to fashion, and music. Guests also had the opportunity to bid on one of a kind sports memorabilia and event packages, with all the proceeds going to the Foundation.
Silvio’s was the hit of the party as guest after guest showed looks of amazement after eating their delicious BBQ. “We were proud to bring a “taste of Brazil” to this special event” remarked owner Silvio Correa. “Jordan and his father are great customers of the restaurant so it was a real honor to be asked to provide some of the food for the event”. Not only was the food a huge hit, Silvio also brought a few of his beautiful samba dancers to entertain the celebrity guests and were even asked to start the fashion show, one of the highlights of this premiere event.
